When you think of Jamaica, you may think of balmy weather, sunny beaches and reggae music. But when Ellie and I think of Jamaica, we think of Jamaican jerk chicken on the grill. We decided to get the authentic recipe from a native Jamaican mon, so if you're ever at Smiley's in Bolinas, don't forget to buy Trevor a beer and tell him how much you like his recipe.
Trevor's Jerk Chicken
1 chicken cut up and skinned
1 lemon
1 tsp. thyme
2 bay leaves
1/4 tsp. allspice
1 T. chopped ginger
1/4 tsp. black pepper
dash salt
juice of 3 lemons
1/4 c. of jerk sauce*
1 large yellow onion, cut up
bunch of green onions, cut up
6 cloves of garlic
3 serrano or jalapeno peppers, chopped (opt.)
Mix ingredients and throw in food processor or blender; blend to a thick sauce.
Wash chicken and squeeze the juice of a lemon on chicken.
Pour your sauce on chicken and marinate overnight in frig.
Next day, BBQ slowly on the grill 'til chicken's done.
Serve with your favorite picnic side dishes.
*Jerk sauce is found in most major markets.
